DSC_0564IL Posto overlooks LaTrobe Terrace in leafy, buzzing Paddington. As you enter, the simple, atmospheric décor with bold patterns and blocks of colour is as warm and inviting as the toasty aroma from the wood-fired oven.

IL Posto is a staple of the pizza scene, and has built a reputation for pizzas that honour simplicity and showcase their ingredients without distraction. Head chef Salvatore Siragusa designs a seasonal menu, which usually boasts more than 10 pizza options. Prices start at $19 for Margherita with fresh basil and locally made bocconcini, and range to $26 for Numero Uno with porcini mushrooms, rosemary, asiago, and bresaola.DSC_0581

Their crispy bases and minimal cheese are just enough to bind the toppings and carry the flavours. The toppings are plentiful with fresh, authentic ingredients that burst with flavour. My personal favourite is the Prosciutto di Parma ($24) layered with fresh basil that makes the thin layer of prosciutto sing.

The attentive staff are happy to customise ingredients for diners with dietary requirements. Each pizza can be served on a fantastically light, crispy gluten-free base at no extra cost. And the pizza menu has two vegetarian options: pumpkin, spinach, and goat’s cheese ($23.50), and a calzone topped with black olives and marinated artichokes ($23).

‘IL Posto’ is Italian for ‘the place’; with pizzas of this calibre, it is certainly the place to be.
